Beetroot Houmous & Zero-Waste Vegan Chocolate Mousse

Ingredients pt 1

For the humous: 

  • 1 can chickpeas, drained (drain the chickpeas into a bowl and keep the juice, known as aquafaba)
  • 1 tbsp yoghurt
  • 1 tbsp olive oil
  • 1 large raw beetroot, grated
  • Pinch of cumin, salt and pepper
  • Squeeze of lemon juice
  • 1 clove garlic
  • 1 tbsp tahini
  • Dash of water (if necessary)
Method pt 2
  1. Using a mixer or blender, blend the ingredients together until well combined
  2. Add a dash of water if necessary to create a smooth consistency
