Nourish bowl with beetroot falafel

Oh my Gosh! This deliciously nourishing recipe is a sure-fire way to upgrade your lunchbox. Crunchy tangy sauerkraut perfectly complements our peppery Beetroot Falafel, while smooth red pepper hummus brings a dash of excitement to the veggie mix. Switch it up however you like with our alternative ingredients options.

Ingredients pt 1
  • 250g shop-bought pouch of mixed grains
  • 1 red pepper, sliced and roasted (alternatively cherry plum tomatoes or sweetcorn)
  • 4-6 spears tenderstem broccoli (alternatively, asparagus spears)
  • A hand full of rocket & spinach (alternatively, blanched kale or shredded hispi cabbage)
  • 1 tbsp sauerkraut (alternatively, kimchi, pickled gherkins or onions)
  • 1 packet of Gosh! Beetroot Falafel
  • 1 tbsp red pepper hummus (alternatively guacamole or pesto)
  • A pinch of pumpkin and sesame seeds (alternatively, sunflower seeds, crispy onions, or bread crumb “bacon”)
  • Dash of olive oil

 

Dressing (to mix through rice & grains)

  • Juice of ½ lemon
  • 2 tbsp extra virgin olive oil
  • Salt & pepper

Alternatives – Sriracha vegan mayo or smashed avocado mixed with lime juice

 

Pickled red cabbage & onion

  • ¼ red cabbage, sliced
  • 1 red onion, peeled & sliced

Alternative – olives with a lemon or lime wedge

Method pt 2
  1. Prepare the mixed grains pouch according to the instructions on the packet.
  2. Combine the dressing ingredients in a bowl and then stir through the mixed grains.
  3. To make the pickled onion and red cabbage, thinly slice both and heat for 2 mins with 4 tbsp cider vinegar, a pinch of salt, and cracked black pepper.
  4. Pan-fry the red pepper and longstem broccoli with a dash of olive oil, until golden brown. Leave to cool.
  5. Arrange the grains, pickled red cabbage, sauerkraut, broccoli, red pepper, spinach, and rocket in a bowl. Place the beetroot falafel and red pepper hummus on top.
  6. Finally, sprinkle with the pumpkin and sesame seeds.
