Breakfast Burrito with Gosh! Moroccan Spiced Koftas and all the trimmings

Ingredients pt 1

1 packet Gosh! Moroccan Spiced Koftas

4 Tortilla wraps. (I used wholemeal)

1 small packet of firm Tofu cut into cubes

2 large field mushrooms sliced

100g Spinach leaves

Handful of cherry tomatoes sliced

For the lime guacamole

2 Avocados peeled sliced

2 Fresh lime juiced

Small bunch of coriander leaves chopped

Salt and pepper

Method pt 2
  1. Preheat oven to 180 degrees celcius and cook the Koftas for 10 minutes.
  2. Meanwhile heat a little olive oil in a frying pan on medium heat. Fry the tofu and sliced mushrooms for about 5 minutes turning over so tofu goes golden and mushrooms cook. Season with a little salt and pepper and put to one side
  3. Now make the lime guacamole by either using a small hand blender or whisking all the ingredients together to form a smooth paste.
  4. Now assemble to Burrito wraps by spreading the lime guacamole on first then the spinach leaves and chopped tomatoes. Then the cut the koftas in half and add along with the tofu and mushroom mixture. If you like it spicy add some chopped fresh chillies here and then wrap up. Place the 4 wrapped burritos back in the oven for 5 minutes on a baking tray and serve with a wedge of fresh lime. 

Veggie Hack

Swap the tofu to scrambled egg and add some grated cheese before you place back in the oven for a cheesy melt delight.
