BRUSCHETTA WITH MED FALAFEL
Crunchy, light and tangy, these bruschetta bites provide a wonderful Mediterranean-spiced lunchtime retreat from work. With our hearty falafel, soft, smoky chargrilled veggies and smooth tasty hummus, this one’s sure to make you say ‘oh my Gosh!’
Serves 2
INGREDIENTS
- 2 slices of toasted rye sourdough bread
- A garlic clove to rub across the toasted sourdough
- 1 red pepper, diced and chargrilled
- 1 aubergine, diced and chargrilled
- 2 tbsp hummus
- 1 pack of Gosh! Mediterranean Falafel
- Coriander and parsley roughly chopped
METHOD
- Rub the sourdough slices with a garlic clove, drizzle with olive oil and pan-fry until golden. Leave to cool.
- Pan-fry the pepper and aubergine with a dash of olive oil until softened. Leave to cool.
- Smother the rye bread with hummus, add the Romano pepper and aubergine, and crumble Mediterranean falafel over the top. Finish with a sprinkle of roughly chopped coriander and parsley.
