BRUSCHETTA WITH MED FALAFEL

Crunchy, light and tangy, these bruschetta bites provide a wonderful Mediterranean-spiced lunchtime retreat from work. With our hearty falafel, soft, smoky chargrilled veggies and smooth tasty hummus, this one’s sure to make you say ‘oh my Gosh!’

Serves 2

 

INGREDIENTS

  • 2 slices of toasted rye sourdough bread
  • A garlic clove to rub across the toasted sourdough
  • 1 red pepper, diced and chargrilled
  • 1 aubergine, diced and chargrilled
  • 2 tbsp hummus
  • 1 pack of Gosh! Mediterranean Falafel
  • Coriander and parsley roughly chopped

 

METHOD

  1. Rub the sourdough slices with a garlic clove, drizzle with olive oil and pan-fry until golden. Leave to cool. 
  2. Pan-fry the pepper and aubergine with a dash of olive oil until softened. Leave to cool.
  3. Smother the rye bread with hummus, add the Romano pepper and aubergine, and crumble Mediterranean falafel over the top. Finish with a sprinkle of roughly chopped coriander and parsley.
