Summer Curry Traybake using Gosh! Sweet Potato Pakora with Red Pepper, Cumin & Chilli

Ingredients pt 1

  • 1 packet of Gosh! Sweet Potato Pakora
  • 2 sweet potatoes, washed and quartered
  • 1 small cauliflower, cut into florets
  • 3 tomatoes, quartered
  • 1 red onion, peeled and quartered
  • 4 garlic cloves
  • 1 red pepper, cut into slices
  • 1 tsp of chilli powder
  • 1 tsp of curry powder
  • Olive/coconut oil

To serve

  • Plain yoghurt (or vegan-alternative)
  • Fresh coriander
  • Fresh limes, quartered
  • Fresh chillies (optional)
Method pt 2
  1. Preheat the oven to 190°C (170°C fan)
  2. In a large bowl, combine all the veggies, the spices and 2 tablespoons of oil. Give them a good coating and season well with salt and pepper
  3. Lightly oil the bottom of an oven tray and lay all the veggies on it evenly. Cook in the oven for 20 minutes before taking out and turning the veggies in the tray. Add the Gosh! Sweet Potato Pakora and cook for a further 15 minutes
  4. To serve, drizzle with the plain yoghurt, a squeeze of fresh lime and sprinkle with fresh coriander and fresh chillies if desired

Can also be served in a wrap or with plain rice and mango chutney.
