Mediterranean Chickpea and Sausage Casserole

Ingredients pt 1

1 tbsp olive oil for frying

6 of your choice of Gosh! sausages

1 white onion finely sliced

2 garlic cloves, crushed

4 fresh thyme sprigs

1 tin of chopped tomatoes

1 tin of chickpeas, drained and rinsed

200g of baby spinach

1 red bell pepper – roughly chopped

Squeeze lemon juice + zest of ½ lemon

To serve:

Chopped fresh parsley

Method pt 2
  1. Heat the oil in a large frying pan and fry the onions for about 8 minutes, stirring often, until soft and light brown. Add the garlic and thyme, turn the heat down and cook for 2-3 minutes.
  2. Add the chopped tomatoes, chopped pepper and chickpeas to the pan. Stir well, then bring everything to a gentle simmer. Cook for 15 minutes until the sauce has reduced slightly and thickened.
  3. Add the sausages to the pan and cook for another 10 minutes. Just before, add the baby spinach and the chopped parsley.
  4. Season well with salt and pepper, then divide among bowls. Serve drizzled with a little olive oil and a squeeze of lemon juice and lemon zest. Sprinkle with extra parsley if you like.
